Curly Fries
3 white potatoes (or russet)2 Lt boiling water
50 gr Ancho Rub
1tsp Ancho Rub
1/2cup cornstarch
frying oil
Spicy Ketchup Mayo
•2 parts Ketchup•2 parts Maple Salsa Macha
•1 part mayonnaise
Mix well.
Cut potatoes with a spiral cutter. Bring water to boil, when boiling turn heat off. Add curly potatoes to the water and wait 15 min. Rinse with cold water and place them on a tray.
Mix 50gr of Ancho Rub with cornstarch and coat curly potatoes until even.
Fry potatoes in small batches at 350F. Place curly fries on a paper towel to absorb oil excess.
Season with 1 tsp of Ancho Rub, add fresh lime juice and cilantro. Serve with spicy ketchup Mayo.
